Roti oh Roti

So this is a stack of Roti I cooked last night. It is sort of like a chapati... or flat nan...or a really yummy tortilla, but NOT really like any of those things! BETTER. Roti here is eaten with Daal or curry. Very often a breakfast dish called Roti Canai.
But I have created many excuses and uses for Roti. Last night, we used it as we would a tortilla for burritos. A little melted cheese, some re fried beans (that we found in Singapore), some diced red pepper, lettuce, hot sauce for Devin.....brilliant.
How will I live without roti when we return to the States? Here, in street restaurants it is made fresh and cooked on these huge cooker tops....I can also buy it frozen and then just cook it in a skillet.
Well- mark my words people....when I get to the States- I will learn to make the dough myself....might even try to make it gluten free....and I will cook and serve Roti. Hear that????!!!!
